New Plant Orientation: Safe and Easy (English) - New Mexico State University 2005 - - Video furnished by Media Productions, New Mexico State University. Noncommercial use only. Understanding and implementing regulations for the production of safe and wholesome meat products can be challenging. The United States Department of Agriculture's Food Safety Inspection Service (USDA/FSIS) in partnership with New Mexico State University and the New Mexico Livestock Board, created this video to help new and existing meat processing plants reach this goal. In this video, plant owners will get an overview of the plant inspection process and learn about two methods designed to reduce pathogens. They will see how to implement Sanitation Standard Operating Procedures (SSOP) and individualized Hazard Analysis and Critical Control Points (HACCP) plans. HACCPs and SSOPs were developed by USDA/FSIS and are supported both on national and state levels. By following these procedures faithfully, meat processors can reach their goal of producing safe, unadulterated meat that will be both profitable and healthy.

Specifically, attendees will learn how to: *Develop a data collection strategy *Understand governmental regulatory data requirements *Discern clean from contaminated data *Identify vital missing data *Create a data flow diagram *Sort out vagrant misinformation *Develop a plaintiff or defendant questioning strategy to validate the case theory or disprove errant theories About the Expert Dr. Darrel Suderman, President of Food Technical Consulting, has worked for food manufacturing and leading restaurant chains for over 20 years. For the last seven years, Dr. Suderman has served as an expert witness/consultant for both plaintiff and defense attorneys throughout the United States. Dr. Suderman received his B.S. and M.S. degrees in agricultural education and his Ph.D. in Food Science from Kansas State University. He holds two U.S. patents, co-authored a food processing book, and has written over 40 peer-reviewed and trade magazine articles and white papers. He has worked in Research & Development, Quality Assurance, and Food Safety for many of the leading restaurant chains, including KFC, Boston Market, Church’s Chicken, Quiznos, Captain D’s, Chick-fil-A, and Wendy’s International. In addition, Dr. Suderman co-founded Business IQ LLC as a business intelligence IT consulting company, which has been accepted as an official partner of SAP software company. A few of his clients have included Foster Farms, Jennie-O Turkey Store, Gold’n Plump Poultry, Johnsonville Sausage, E & J Gallo Winery, Tyson Foods, Organic Valley, and Givaudan Roure Flavors.
