Does Coffee Affect Cholesterol?
New data suggests even paper filtered coffee may raise LDL bad cholesterol. Coffee drinkers do seem to live longer and have lower cancer rates overall, but coffee may worsen acid reflux disease, bone loss, glaucoma, and urinary incontinence. Bottom line I don’t recommend drinking coffee, but mainly that’s just because every cup of coffee is a lost opportunity to drink something even healthier—a cup of green tea, which wouldn’t have the adverse cholesterol consequences. How Much Acrylamide Does Your Coffee Contain? How to Reduce These Levels in Coffee!
Acrylamide is a chemical that may form in certain foods during high-temperature cooking, such as frying, roasting and baking. It is found primarily in potato-based foods, cereal-based foods, and coffee. For most people, coffee does not represent the greatest source of exposure to acrylamide. This often is more likely to come from things like fried potato products like French fries or baked breads. The bad news is that acrylamide is a proven carcinogen and if your consumption of coffee is high, then this might represent a significant problem. Acrylamide has been shown to cause cancer in lab rats, and researchers from the Swedish Food Administration found in 2002 that unexpectedly high levels of the carcinogen are present in high-carbohydrate foods. Apart from its carcinogenic properties, this compound has also been linked to nervous system and fertility disorders. Fortunately, there are ways to reduce these levels in your coffee. In 2002, the U.S. Food and Drug Administration released a comprehensive database listing various foods' content of acrylamide. According to this list, it appears that there is a difference in acrylamide levels between the different brands, with Folgers and Taster’s Choice being highest in the concentrations and Yuban being by far the lowest. However, the content of acrylamide changes once the coffee is brewed. According to the same data list, six brewed coffees were tested for acrylamide and the numbers dropped significantly. They ranged from 5 to 11 parts per billion compared to a range from 37 to 353. For example, The Starbucks Columbia is 163 ppb when it’s not brewed and after you make it, the concentration becomes 7 ppb. That’s almost a 96% reduction. A new study tested nine popular coffee brands and found each and every one to contain undetectable levels of acrylamide. In Hong Kong there was a risk assessment study performed in 2003, that indicated low amounts of acrylamide in brewed coffee also, 3-13 micrograms per kilogram. The average amount of acrylamide in a cup of coffee is 1.77 micrograms per serving. When the top-selling American fast food French fries were tested, they found that the average acrylamide level was 75.65 micrograms per serving. This means that a person would have to drink 43 cups of coffee to exceed the amount of acrylamide found in a large order of French fries. According to this information, consumers should be concerned with many popular food products with elevated levels of acrylamide, but it appears that coffee is should not be one of them. If you are still concerned, it is suggested to purchased darker roasted coffees. Since tests have consistently shown that dark roasts are actually lower in acrylamide levels than beans that have been roasted in the regular manner. It is also recommended to drink brewed coffee versus espresso. Because most of this compound is in the ground bean. The problem with espresso versus brewed drip coffee is that you get more of the sediment in it. Likewise for French press. In addition, try to chose Arabic coffee beans over robusta beans, which contain somewhat higher levels of acrylamide. According to the FDA list, Yuban 100% Columbian, Hills Bros 100% Colombian and Seattle’s Best Medium Roast contained the least amounts of acrylamide. So if you love your coffee but are troubled about the amount of exposure to acrylamide that you are undergoing, then do consider the brand, type of roast and method of preparing it carefully. While people have a right to be concerned about acrylamide in their food, the level of exposure in brewed coffee is limited. Antioxidants in Coffee

Daily coffee consumption reduces your risk of type II diabetes and various forms of cancer. The caffeine in coffee elevates your mood and reduces the risk of clinical depression, neurologic diseases such as Alzheimer’s and Parkinson’s and even the risk of suicide. Aside from caffeine the active ingredients that are responsible for all of these good things are the antioxidants in coffee. Just what are antioxidants and what are the antioxidants in coffee? List of Antioxidants in Coffee The American Institute for Cancer Research says that coffee contains the following: • Chlorogenic acid, an antioxidant compound that is the major phenol in coffee • Quinic acid, a phytochemical that contributes to the acidic taste of coffee • Cafestol and kahweol, compounds that are extracted from the beans' oil during brewing. Unfiltered coffee, such as French press or boiled coffee, contains these compounds • Caffeine, a naturally occurring stimulant that affects the central nervous system • N-methylpyridinium (NMB), created by roasting, may make the antioxidants more potent Chlorogenic acid may be slightly lower in decaf coffee according to limited research, but it still contains plenty of phytochemicals. Lab studies suggest that instant may be lower in antioxidant potency than brewed coffee, though more research is needed . And just what do antioxidants do? Antioxidants An antioxidant is a molecule that inhibits cell damage and cell death in human cells caused by oxidative breakdown of other molecules. Oxidation is a factor in sickness and aging. Antioxidants in coffee do the same things chemically as other antioxidants and because we drink so much coffee worldwide coffee is the primary source of antioxidants. Antioxidants help prevent the damage caused by excessive oxidation and to a degree inhibit the aging process. When an oxidative reaction brought on by disease gets going it produces free radicals that start chain reactions which in turn cause cell and tissue damage. The human body has or uses antioxidants to control this situation. Natural means of controlling oxidation include vitamins C and E as well as glutathione. It is low levels of antioxidants that can lead to a condition referred to as oxidative stress and resultant damage to cells in the body. Methylpyridium is one of the organic coffee antioxidants and is created during the roasting process of organic coffee. This breakdown product of trigonelline has been found to increase activity of phase II enzymes. Doctors believe that these enzymes protect against colon cancer, which is the second leading cause of death from cancer in the USA. Recent research shows that organic coffee antioxidants include chlorogenic acid lactones and lipophilic antioxidants. Chlorogenic acid lactones and lipophilic antioxidants are capable of protecting nerve cells when challenged with hydrogen peroxide. Blueberries, celery seeds, etc. have very high levels of antioxidants but due to the sheer volume of coffee that we consume, antioxidants in coffee outshine all other sources as a benefit to human health. Antioxidants Content of Coffee The Nutrition Journal published a study of antioxidant content of foods in 2010. In the beverage section the researchers found a total antioxidant content range of 0.89 mmol/100 g for one type of brewed coffee with milk to 16.33 mmol/100 g for one type of double espresso coffee. These measurements were taken from commercially available coffees. Coffee making method defines amount of health-benefitting acid in coffee

Coffee is one of the most sought-after commodities, and it's part of every morning and lunch break for people all over the world owing to the caffeine in it. Now, there's a new reason for people to continue reaching for their coffee mugs -- it's been discovered that coffee also contains chlorogenic acid, which has various health benefits. Mostly found in coffee beans and fruits,... chlorogenic acid is phytochemical that helps reduce blood sugar levels. Numerous studies show it has anti-oxidant properties... and is also proven to have anti-cancer effects. Studies are still underway,... so the amount of chlorogenic acid in coffee isn't known for sure. According to local researchers, the amount appears to depend on how it's roasted, ground and brewed.. Researchers from Gyeonggi Institute of Health Environment say some methods can even quadruple the amount of chlorogenic acid. To get the most chlorogenic acid in a cup of coffee,... it starts with the roast. Beans should be roasted to medium,... because at that level they've been shown to have more than twice the amount of chlorogenic acid as medium-dark roasted beans. The beans should also be ground more finely,... which can boost chlorogenic acid levels by up to 86 percent. And... there's a specific rule for brewing the coffee. If you were making a single cup, water should be dripped through the grounds three separate times to get the most chlorogenic acid out of them. The researchers did caution that, despite its health benefits, too much chlorogenic can have negative effects for people with certain conditions. (KOREAN) "Chlorogenic acid is acid, after all. BLACK COFFEE & CHOLESTEROL Can Black Coffee Affect Your Cholesterol Levels. Coffee is a popular beverage that is heavily consumed in the United States. With a coffee shop on practically every corner, it is difficult not to join the coffee craze that has swept the nation. There are many varieties of coffees, but they are prepared in two main ways: filtered and unfiltered. Filtered coffees are the most common mode of preparation in the United States and involve brewing the coffee through a filter. Unfiltered coffees, also known as “boiled” coffees, do not employ a filter and include espresso, Turkish coffees, and French press coffees. Coffee contains many ingredients, most notably caffeine, chlorogenic acid, and chemicals called diterpenes. Many studies have examined the health benefits of coffee, paying particularly close attention to caffeine. Some studies have even suggested that drinking coffee may prevent diseases such as type II diabetes mellitus, Parkinson’s disease, certain types of liver cancer, and possibly improve your heart health by lowering your cholesterol and triglyceride levels. To date, coffee consumption has not been directly associated with cardiovascular disease, but some studies reveal that some forms of coffee may adversely affect your lipid profile. Although most studies have noted that filtered coffee has a neutral effect on lipid levels, unfiltered coffee appears to increase LDL, total cholesterol, and triglycerides in some studies. Two diterpenes found in high amounts in unfiltered coffee, cafestol, and kahweol, have been found to actually raise cholesterol levels. These studies examined different types of unfiltered coffee, as well as coffee oil. Most studies have indicated that individuals consuming roughly 60 milligrams of cafestol (equivalent to ten cups of unfiltered, French press coffee or two grams of coffee oil) may raise total cholesterol levels by an average of about 20%. This is largely due to an increase in low density lipoprotein (LDL) levels and triglyceride levels. High density lipoproteins (HDL) do not appear to be affected. It is thought that filtered coffee does not have this effect because the diterpenes are caught in the filter and not included in the coffee consumed. More studies are needed to examine the effect of coffee on lipid levels since the results from some of these studies have been mixed. In the meantime, if you are trying to watch your cholesterol and triglyceride levels, you may want to lower your consumption of unfiltered coffee beverages if you drink large amounts of this beverage frequently. Additionally, you should watch out for some of the things you are adding to your coffee. Heavy cream, sugar, chocolate syrup, and caramel can add calories to your coffee and could raise your cholesterol and triglyceride levels if you consume these items on a regular basis.

Bad coffee can be toxic. Bad quality coffee can have a lot of impurities in it, which can cause sickness, headache or a general bad feeling. 10 Reasons I Drink Coffee
In February of this year (2016) I published a video called “My Coffee Experiment”. In that video I explained that I tried being a coffee-drinker for 2 months but for various reasons decided to stop. Several weeks after making the video and quitting coffee, an old friend of mine (who works as a barista in London) saw the video and wrote a comment underneath suggesting that I try higher quality coffee rather than instant. He said that his golden rule is to drink better coffee, not more. Now I didn’t rush out to buy coffee right away. But I did note the fact that it was instant coffee I’d been drinking for those 2 trial months. So I took his point into consideration. Later that same week, I was in my cousin’s house for lunch and the subject of coffee came up. I told him about my trial run with instant coffee. I also mentioned my friend’s suggestion about drinking higher quality coffee instead. To my surprise, when I was leaving my cousin’s house he presented me with a French press! He told me it was a spare one that he wasn’t using and he’d like for me to have it as a gift. That way if I’d like to try ground coffee I’d now have a French press to do so. At this stage it seemed as though the universe was conspiring to get me to try coffee again! And so armed with my new French press and my friend’s suggestion, I decided to buy some ground coffee. A quick Google search taught me how to use it and that’s what I’ve been doing ever since. I currently drink 1 cup (sometimes 2) of French press coffee on most days of the week. So why the change of heart? What difference did I experience between instant coffee and French press ground coffee? And why did I feel the need to quit instant coffee after 2 months; whereas after 6 months of drinking French press I feel differently about it? I think it all boils down to a few key factors (pun not intended :-) The main thing I didn’t like about my instant coffee-drinking habit was this: it was becoming compulsive. I found myself drinking several cups a day (sometimes 4 or 5) and I was becoming over-reliant on it. Any time something becomes compulsive for me I tend to put the brakes on and evaluate my behaviour. After a little research and some self-reflection, I realized drinking instant coffee was becoming an unhealthy habit and so I decided to quit. This begs the question: how come I was compulsive with instant coffee but don’t have the same issue with French press? 1. First of all, instant coffee typically contains less caffeine than French press coffee. As such, the stimulation from instant coffee wears off faster. This can cause a person to soon desire another cup in order to get perked up again. With French press coffee, because the caffeine content is higher, I don’t experience this. So I’m far more content with just 1 cup a day (sometimes 2). 2. Another reason for my compulsivity with instant coffee was likely due to the fact that it’s designed to be unbelievably effortless to make (hence the name!). Boil kettle, put coffee and hot water in mug, stir, done. I believe this effortlessness and fast preparation also increased my propensity to drink numerous cups throughout the day. French press coffee takes more time and effort to prepare - which makes me less likely to keep making more. 3. For me, a mug of French press coffee is much more satisfying than a cup of instant. Which, again, makes me more content with having just 1 or 2 cups a day. So that’s it for the backstory and my different experiences with instant and French press coffee. I also want to re-emphasize the point I made in the video about intuition and listening to my body. A big part of why I drink moderate amounts of French press coffee in this chapter of my life is because I intuitively feel it’s beneficial for me to do so. Years ago we wrote about decaf coffee risks. The concern today with a decaf coffee risk is that decaf coffee contains greater amounts of two substances which are known to elevate cholesterol. Although kahweol and cafestol are both removed by coffee filters, not everyone uses a paper filter when brewing coffee. (Think French Press.) The two substances, kahweol and cafestol, are diterpenes, and they have been found to raise low density cholesterol and triglycerides by as much as twenty percent. The flip side of this concern is that the two substances also seem to have anti-cancer properties. Considering that coffee consumption is known to reduce the risk of liver, prostate, colon, and endometrial cancer, it cannot be all bad. So, is there decaf coffee risk with higher cholesterol levels? There is no long term risk that we know of for increased heart disease with regular or decaf coffee. Kahweol and Cafestol These are two virtually identical chemical substances. Food-info.net writes about Cafestol and Kahweol. The concentration of these two compounds depend on the type of coffee; arabica beans contain both cafestol and kahweol, whereas robusta beans contain half as much cafestol and hardly any kahweol. In arabica beans they may be present in up to 1% of the total volume of the beans. Cafestol raises serum cholesterol more potently than kahweol does. A mixture of cafestol (60 mg/day) and kahweol (51 mg/day) increased serum cholesterol only slightly more than pure cafestol (64 mg/day) did. Results with pure kahweol are not available due to difficulties with purification and stability of this diterpene. Because these substances stick to paper filters they occur in lower concentrations in filtered coffee. Both paper filters and cloth filters remove significant amounts of both chemicals. And both of these substances also have anti-cancer properties as well and considering that drinking coffee reduces the incidence of various cancers perhaps having a little Cafestol or Kahweol in your coffee is not all bad. Other Problems with Decaf Coffee Positive Wellness lists a whole host of negative effects of decaf coffee. One of them is the residual chemicals from common decaffeination processes. The most common method for decaffeinating the coffee beans uses chemical solvents that may leave a residue on the coffee seeds. Soaking the coffee seeds in several chemical solvents such as methylene chloride and ethyl acetate for about 10 hours may be the reason for this. The beans are steamed again to remove most of the solvents. Be known that the FDA allows residues of these solvents to remain on the decaf coffee beans even after roasting. Read the article for more info but remember that the reason you are drinking healthy organic coffee is to avoid all of those unwelcome chemicals that can be found in regular coffee. If you do want decaf remember that decaf is not caffeine free. Drink five cups of decaf coffee and you will get about the same amount of caffeine as one cup of regular java. Now researchers have identified a specific bioactive substance in coffee that stimulates insulin secretion and sugar uptake by muscle cells. The report is in the Journal of Natural Products. Cafestol, a Bioactive Substance in Coffee, Stimulates Insulin Secretion and Increases Glucose Uptake in Muscle Cells: Studies in Vitro diet and exercise intervention can delay or prevent development of type-2-diabetes (T2D), and high habitual coffee consumption is associated with reduced risk of developing T2D. This study aimed to test whether selected bioactive substances in coffee acutely and/or chronically increase insulin secretion from β-cells and improve insulin sensitivity in skeletal muscle cells. Insulin secretion from INS-1E rat insulinoma cells was measured after acute (1-h) and long-term (72-h) incubation with bioactive substances from coffee. Coffee, Coffea arabica Benth. (Rubiaceae) and Coffea canephora Benth. (Rubiaceae), contains a diversity of bioactive components that varies with coffee species and the roasting and brewing methods (8-10). The specific substance in coffee that stimulates insulin secretion and subsequent uptake of sugar by muscle cells is cafestol. A related compound, caffeic acid has similar effects. How Much Cafestol Is in Your Coffee? Since cafestol can be instrumental in fighting type II diabetes how much of the stuff is in your coffee? According to the researchers roasted Arabica coffee beans contain 0.5% caffeic acid while a cup of coffee contains 35 to 175 mg of caffeic acid. Boiled coffee, Turkish coffee and French press coffee contain 6 to 12 mg of cafestol while filtered coffee contains only 0.2 to 0.6 mg of cafestol. It turns out that the paper filter traps and retains the majority of the cafestol when brewing coffee. In addition lighter roasts have more cafestol then darker roasts according to Science Direct. The extraction yield of cafestol from roast and ground (R&G) coffee beans was evaluated using brews prepared by four brewing mechanisms (boiled, Turkish, French Press and Mocha Pot). The cafestol content of the R&G coffee and the resulting brews was measured and extraction yield calculated. The R&G coffee had an average cafestol content of 603 mg/100 g R&G coffee with a slight reduction at higher roast intensities. In the brews, preparation method had an impact on cafestol concentration with French, Turkish and boiled preparation methods producing the highest cafestol concentrations. The extraction yield of cafestol was shown to be dependent on the brew mechanism and roasting time, with the lightest roast coffee prepared by French press or boiled preparations having the highest cafestol extraction yield (6.5% and 5.84%) and dark roast Mocha and Turkish preparations had the lowest extraction yields of 2.42% and 2.88% respectively. To reduce and prevent soil erosion, keep records of fertilizer and chemical use and use these products responsibly, follow good farming practices including integrated pest management, avoid deforestation, protect water sources, native and endangered species, use native fauna for shade grown coffee, train workers properly in their own language, implement and follow through on health and safety requirements, teach and require good hygiene, trace coffee from planting to roaster and carry out internal inspections every year. Rainforest Alliance Certification The process of getting certified by Rainforest Alliance is similar to getting UTZ Certified. Growers start by achieving partial success and grow into the eventual requirements. Rainforest Alliance requires that coffee growers meet half of the criteria for any given area of concern to start with and meet eighty percent of the requirements overall. These criteria include ecosystem preservation, safety of wild animals, watershed conservation, fair hiring and labor practices, appropriate safety measures for workers, and strict adherence to agrochemical use standards. The gold standard for certification in North America is the USDA (United States Department of Agriculture). The USDA directly certifies coffee grown on US soil, namely in Hawaii. In Central and South America the USDA uses the services of agencies such as Bio Latina to walk the mountains from Mexico to Peru and Colombia to Brazil testing soil, coffee and farming practices to guarantee that your certified organic coffee is toxin and contaminant free. (31 Mar 2018) FOR CLEAN VERSION SEE STORY NUMBER: 4146881 A Los Angeles judge has determined that coffee companies must carry an ominous cancer warning label because of a chemical produced in the roasting process. Superior Court Judge Elihu Berle said Wednesday that Starbucks and other companies failed to show that benefits from drinking coffee outweighed any risks. He ruled in an earlier phase of trial that companies hadn't shown the threat from the chemical was insignificant. The Council for Education and Research on Toxics, a nonprofit group, sued Starbucks and 90 other companies under a state law that requires warnings on a wide range of chemicals that can cause cancer. One is acrylamide, a carcinogen present in coffee. "Defendants failed to satisfy their burden of proving ... that consumption of coffee confers a benefit to human health," Berle wrote in his proposed ruling. The coffee industry had claimed the chemical was present at harmless levels and should be exempt from the law because it results naturally from the cooking process that makes beans flavorful. It also argued coffee was good for the body. The ruling came despite eased concerns in recent years about the possible dangers of coffee, with some studies finding health benefits. In 2016, the International Agency for Research on Cancer — the cancer agency of the World Health Organization — moved coffee off its "possible carcinogen" list. For people without diabetes, coffee may help reduce the risk of developing diabetes. Caffeine has been shown in the short term to increase both glucose and insulin levels. Because of this, people with diabetes should be cautious when consuming coffee. Once sweetener is added to coffee, it removes the benefits of diabetes prevention. It can actually increase your risk of developing diabetes. It turns out that caffeine and antioxidants in coffee have different effects in regard to diabetes. Many but not all health benefits of drinking coffee come from the antioxidants. In the case of Type II diabetes prevention drinking coffee increases levels of sex hormone binding globulin which in turn is related to its effect in reducing diabetes incidence. However, caffeine has direct effects on insulin and blood sugar. Coffee for Diabetics Although drinking reduces your risk of getting Type II diabetes there may be problems if you already are diabetic. Caffeine with or before a meal causes a higher blood sugar. However there appears to be a protective effect with longer term coffee consumption as coffee’s effect on glucose and insulin sensitivity reduces with continual coffee drinking. Adding sugar to coffee dampens this effect to the detriment of diabetics. Diabetics who take good care of themselves routinely check their blood sugar. If a Type I or Type II diabetic is paying attention to their blood sugars and relating any changes to coffee consumption they may decide to cut out the coffee. Coffee consumption reduces your chances of getting Type II diabetes and continual coffee intake without sweeteners may be OK in diabetics. BUT drinking coffee is not how one controls diabetes. If you have this disease, go to see your doctor and follow his or her advice to the letter. Health Benefits of Coffee There are lots of health benefits of drinking coffee. If you have a mild case of Type II diabetes should you quit drinking coffee and forego the long list of things coffee can do for you? The key would seem to be good diabetes management. Drinking coffee or not is an issue but calorie intake, exercise, blood urine and sugar monitoring and medications are the mainstays of diabetic management. If your diabetes is under good control even with a cup or two of coffee a day you can probably drink coffee when you have diabetes and get the health benefits of less cancer, lower incidence of degenerative diseases like Alzheimer’s or Parkinson’s and less likelihood of depression or cirrhosis of the liver. Ask your doctor. Organic or Regular? All of the information we have listed applies to both regular and healthy organic coffee. If you are worried about all of the junk that someone might be putting in your food consider safe organic coffee. USDA organic coffee is certified to be grown according to the sustainable growing practices. Coffee used to be grown in the shade and commonly in forested areas. Historically the environment and spacing out the coffee plants took care of much of the problem of insects and plant diseases. However, new coffee strains were introduced which can grow in the full sun. With the use of synthetic fertilizers the grower produces more coffee. This also erodes the soil and leaves synthetic fertilizer residue in the coffee bean. Crowding of plants brings about more plant diseases and pests which growers commonly treat with fungicides and pesticides, which also end up on the coffee bean. Safe organic coffee, on the other hand is grown and certified to be grown without use of pesticides, herbicides, or synthetic fertilizers. When the consumer has his cup of safe organic coffee each morning he can be assured that the product he is drinking is good for the environment. And, he is not drinking a contaminated beverage. Over one hundred thirty contaminants can be found in a cup of regular coffee. The Australian Food Standards Authority found metals such as aluminum and zinc, pesticide residues, and many other unwelcome substances in commercially available regular coffee. The effects of some of these chemicals are impairment of the immune system, liver problems, and even certain kinds of cancer. On the other hand, antioxidants in black organic coffee in easy to find organic coffee brands can help prevent disease. Antioxidants Are Good for You Antioxidants are good for you and the major source of antioxidants for most people is coffee. There are other good sources of antioxidants but, because we drink so much coffee, it is the major source. Organic coffee antioxidants are available all day long in your coffee cup. Healthy organic coffee is not only free of many of the impurities found in regular coffee but contains things that are beneficial to your health. These things in organic coffee include antioxidants. So, just what are antioxidants and why should we want to have more of them? When an oxidative reaction brought on by disease gets going it produces free radicals that start chain reactions which in turn cause cell and tissue damage. The human body has or uses antioxidants to control this situation. Natural means of controlling oxidation include vitamins C and E as well as glutathione. It is low levels of antioxidants that can lead to a condition referred to as oxidative stress and resultant damage to cells in the body. Objective: The objective of this project is to clarify the relationship between Mate and Cancer. There are many conflicting reports that either claim that Mate has carcinogenic substances while others state that Mate consumption helps prevent cancer. It is a fact that the higher anti-oxidant capacities from Mate helps the organism to fight the free radicals which help in cancer prevention, but on the other hand, many studies report the presence of cancerous PAHs (Polycyclic Aromatic Hydrocarbons) in Mate. In December 2012 a series of tests are scheduled to shed light on what causes Mate to be cancerous by comparing many Mate samples that were harvested and processed under different conditions. In order to analyze the carcinogenic substances in Mate we need a bit of help to finance the lab tests that will analyze the PAH levels in the different Mate samples.
