Add desired fruit. 400 calories 24g protein 60g carbs 10g fat Pre-Gym Snack - Protein Bar ***Garden of Life – Peanut Butter Chocolate protein bar (I prefer Vega brand for vegan protein bars. Their chocolate peanut butter one is SO good!) 200 calories 14g protein 26g carbs 8g fat Post-Gym Snack - Avocado Breakfast Sandwich ***2 slices of Olivia super-free bread, toasted with 1 slice of Follow Your Heart pepper jack cheese. Add mashed avocado to one slice of bread and season with garlic powder and pepper. Pan-fry Sol Cuisine’s breakfast patties in oil and salt and pepper. Cook until golden brown on the outside. Assemble sandwich ☺ 450 calories 16g protein 47g carbs 22g fat Lunch - Cauliflower Rice Stir-Fry *** Cook frozen riced cauliflower in pan with no oil or seasonings until all water is cooked off. A 2013 study showed that a whopping 30% of Americans are actively trying to avoid gluten. Although the harmful effects of gluten are controversial among health experts, it is known that several health conditions respond positively to a gluten-free diet. Fortunately, there are many healthy and delicious foods that are naturally gluten-free. Avoiding gluten does NOT have to be tasteless or boring. What is Gluten? Gluten is the name of a family of proteins present in grains like wheat, spelt, rye and barley. There are two main gluten proteins, called gliadin and glutenin. It is the gliadin part that causes the harmful effects. When wheat flour is mixed with water, the gluten proteins form a sticky cross-linking network that has a glue-like consistency. The name glu-ten is derived from this glue-like property. If you've ever held wet dough in your hands, then you will know what I'm talking about. Gluten makes the dough elastic, and gives it the ability to rise during breadmaking. It also tastes good, and provides a chewy, satisfying texture. Many People Are Sensitive to Gluten The most severe form of gluten intolerance is called celiac disease, which affects about 0.7-1% of the population. This serious disease is caused by an autoimmune reaction when the gliadin proteins enter the digestive tract. This can lead to a degenerated gut lining, nutrient deficiencies, severe digestive issues and other serious conditions, many of which are hard to link to digestion. Unfortunately, most people with celiac disease do not know that they have it, as the symptoms can often be vague and difficult to diagnose. Then there is another condition called non-celiac gluten sensitivity. This involves an adverse reaction to gluten in people who do not have celiac disease. There are no good numbers on how common it is, but some estimates place it around 0.5-13%. In people with gluten sensitivity, gluten may cause diarrhea, stomach pain, bloating, fatigue, depression and various other symptoms. A gluten-free diet has also been shown to be effective for some cases of schizophrenia, autism and a type of cerebellar ataxia called gluten ataxia. All of this being said, there is currently very little evidence that gluten is harmful for everyone. Many people seem to tolerate it just fine. There is even evidence that many people with gluten sensitivity are actually sensitive to FODMAPs (a type of carbohydrate in wheat and other foods), not gluten. For these people, a low-FODMAP diet is more appropriate than a gluten-free diet. A Gluten-Free Diet Can be Challenging The purpose of the gluten-free diet is to completely eliminate gluten from the diet. We aren't helpless once it comes to Celiac disease. Although some changes need to be made to our diet if we have this issue - we also need to recognize the importance of healing the digestive system and providing the body with bio-available nutrients as we heal. Avoiding gluten free foods simply isn't enough. Celiac disease develops when a person has one of two (or both) specific genes, eats gluten and has something trigger the condition - something like a viral or bacterial infection or emotional trauma will all act as one of these triggers. I think it also has to do with have poor gut health to begin with. Poor gut health develops over time due to poor diet choices, chronic stress, the over use of antibiotics and emotional trauma. All of this will weaken the digestive system, kill off good bacteria, allow Candida to flourish and allow Celiac disease to become a life-sucking condition. There are several things we need to do to restore our health and to restore the digestive system. These steps include: 1. Avoid gluten. 2. Heal the digestive system. (I mention three different ways to do that in the video.) 3. Eat a nutrient-rich diet. 4. Take a multi-vitamin containing bioavailable nutrients. 5. Purchase gluten free foods that are made with grains other than corn. celiac disease is a long-term autoimmune disorder which affects functioning of small intestine. Symptoms of celiac disease most commonly include diarrhea, abdominal pain , gas, bloating etc. The only known effective treatment is a strict lifelong gluten-free diet, which leads to recovery of the intestinal mucosa, improves symptoms, and reduces risk of developing complications in most people. In this video we have shown foods that any patient suffering from celiac disease can undoubtedly include in daily diet. These foods are gluten free and will help maintain the levels of nutrients in the body without causing any harm. Foods that are made from wheat, rye and barley should be strictly avoided, also in many food products the gluten is available in hidden form, so always read the label of products very carefully.Any form of wheat such as durum, spelt, wheat bran etc needs to be strictly avoided. Oats is a confusing food which itself don not contain gluten but could get contaminated if it is produced in the same place as wheat, barley and rye. So be very careful while choosing for oats.

There's a lot of information and data that is available more on the internet but also some research regarding different diets, and I think food is very crucial to everybody, but some children with this spectrum have increased food intolerances, as well as food allergies. The gluten-free, casein-free diet is the one that has been quite popular. Gluten is present in the grain of wheat, and it's how wheat gets processed. A lot of children have known to have some sensitivity to the presence of gluten in their diet. They don't necessarily have a Celiac disease but they have some intolerance. That is what is being found in some small studies and parents are reporting that removing gluten from the diet can make a big difference, not just with the G.I complains but also with behavior, and speech and language communication and basically connecting as well. So, the gluten-free diet is one of the things that is talked about the casein-free diet. Casein is present in dairy and some kids have just milk intolerance so milk sensitivity, particularly sensitivity to the casein molecule. The theory being that antibodies to gluten and casein actually can affect the opioid preceptors and children seemed to appear to be a little bit more zoned out or as they say antibodies may also be affecting the brain. This is the hypothesis, but there is no back testing for it apart from the Celiac Disease, but you have to do an elimination diet. Parents have to be particularly supported by this because kids are very choosy any picky with their appetite, working with a nutritionist so that you do not lose out the adequate calories you need, you don't develop other deficiencies. Also, there is a lot of hidden labeling. So, do get informed about what are the food that actually are gluten free, and whether there is some cross-reactivity with the way other grains are processed, where its Bali, or rye or even oats. These little details become important because the body has to be from gluten for at least six months for one to see a real difference and to do it significantly. Those are the parents who did it and said it made a difference. Some come back and say it made a remarkable difference than a short period. Others feel it didn't make much of a difference, and yet when re-introducing it back into the diet, so the symptoms come back. They won't show it was related to the particular foods. Gluten and casein, as well as soy are common offenders that are talked about and the research is kind of mixed, but some small studies are coming out. What is interesting is that children with an autism spectrum disorder do have more common G.I problems. G.I being gastrointestinal. They have digestion issues, constipation, diarrhea, and there is also a change seen. For example, is they have lactose or milk intolerance, you can have symptoms of alternating diarrhea, constipation. Those are the kinds of kids I would be more ready to do a gluten-free casein-free diet. But, it's important to get the parents support and the information as they go on to trying any of these elimination diets. There are many other diets with removing salicylate and sulfites which is present in certain fruits like apples and strawberries. There are many diets out there. There's a laundry list from a G.A.P.S. diet to low carbohydrate diet. I think you need to work with a nutritionist and work with a pediatrician, get yourself more informed. Start with the simple things and do it on a gradient. Make sure your child is getting enough calories and enough of the other nutrients that are important.

Grease a muffin tin with oil or cooking spray. In a large measuring cup, whisk eggs, milk, garlic powder, salt and pepper. Set aside. Fill each muffin cup with chopped spinach, tomatoes and goat cheese. Pour egg mixture into each muffin cup. Bake for 15-20 minutes or until they are completely set. This recipe makes 6 frittatas. You could double it to make a dozen. Enjoy!
