But there are many more food items on this short list that commonly contain grains - gravies, croutons, bread crumbs, biscuits, rolls, pita, batter-fried foods, noodles, tortillas, ice cream cones, bran, wheat germ, dumplings, pancake mixes, pies, pumpernickel and rye breads, cornbread, vermicelli, doughnuts, buns, pretzels, spaghetti, waffles and pastries. Many companies have started making gluten free versions of these products. Problem is - they are not TRUE gluten free. Other grains like corn and rice are commonly used as alternative safe substitutes despite the research showing their detriment. Condiments and Seasonings Many common condiments and seasonings contain gluten and cause problems for those who are gluten-intolerant. Also be aware that many gravies and salad dressings are thickened with gluten containing flours and grains. 3. Alcoholic Beverages Most forms of alcohol are made from grains. Many claim that these are OK because they are distilled, but clinically, patients continue to have reactions to grain based alcoholic beverages. Additionally, alcohol slows the healing process and can contribute to other health problems. It is virtually impossible to ensure that all staff members are trained appropriately. I visited Outback Steakhouse several years ago because they advertise a gluten free menu. I asked the waiter about gluten and his response was - "what is gluten?" I know that many of you can probably relate to this as well. As a general rule of thumb, I recommend avoiding eating out as much as possible, because it is impossible to control the potential for exposure. Exposure Goes Deeper Than Food Alone Many people are not aware of the potential to react to gluten from non-food or air born substances. Handling wheat based dog foods, breathing in flour from the air in a bakery, kissing, and skin lotions are common examples where hidden gluten can be found. Common Sources of Hidden Gluten and Cross Contamination licking envelopes or stamps sauces for meats, salads, etc tooth paste shampoo frying oils shared cutting boards or utensils grain based sweetener (i.e. malt, corn sugar) Thickening agents used in processed foods The list goes on and on and on. The bottom line is this - Be Careful and read your labels. Know what you are putting in and on your body. Oats & Corn Are Not Gluten Free

Corn and Oats both contain gliadin and glutenin that make up the gluten complex just like wheat, rye and barley. There is no such thing as a gluten-free oat. The proteins in oats and corn are slightly different as they come from a different subfamily of grasses as wheat, rye and barley. They don't cause a gluten reaction in every gluten sensitive person and don't seem to be able to stimulate the typical celiac disease small intestine damage as effectively as gluten from wheat, rye and barley. They are important in most other autoimmune problems like Hashimoto's Thyroiditis, rheumatoid arthritis and many more. Rice is in the same subfamily as corn and oats but has a much lower gluten content than oats or corn and seems to be tolerated by most gluten sensitive people. Sorghum is closely related to corn but seems to contain a much safer type of gluten than corn or oats. Symptoms appear quickly triggering IgE antibodies that stimulate the release of cytokines and histamines. This results in closing of the throat, fatigue, tearing, hives, itching, respiratory distress, watery or runny nose, skin rashes, itchy eyes and ear, and sometimes severe reactions of asthma and anaphylactic shock. The most common foods are eggs, cow milk, nuts, shellfish, soy, wheat, peanuts, and white fi sh. If you are allergic to these foods, it's best to avoid them completely. Food Sensitivities: Food sensitivity reactions are more common, affecting about 10-20% of us. These reactions are delayed and can take several hours to several days to appear. This makes it difficult to track them down. It's estimated that 95% of food reactions are the delayed type. These correspond with higher levels of IgG, IgA, and IgM antibodies to specific foods. The symptoms are varied and correspond with symptoms of leaky gut syndrome. 80% of food sensitivity reactions are to wheat, dairy, eggs, beef, citrus, corn, pork, or mold on foods. Lactose Intolerance: It's estimated that about 25% of Americans, and 75% of the world's population is lactose intolerant. It's most prevalent in people of Asian, African or Mediterranean descent. In the US, virtually all people of Asian ancestry and 80% of African-Americans are lactose intolerant. Interestingly, most people can tolerate small amounts of dairy products. The View features celiac disease. Coeliac disease (pronounced /ˈsiːli.æk/), also spelled celiac disease, is an autoimmune disorder of the small intestine that occurs in genetically predisposed people of all ages from middle infancy on up. Symptoms include chronic diarrhœa, failure to thrive (in children), and fatigue, but these may be absent, and symptoms in all other organ systems have been described. A growing portion of diagnoses are being made in asymptomatic persons as a result of increased screening. Coeliac disease is caused by a reaction to gliadin, a gluten protein found in wheat (and similar proteins of the tribe Triticeae, which includes other cultivars such as barley and rye). Upon exposure to gliadin, the enzyme tissue transglutaminase modifies the protein, and the immune system cross-reacts with the small-bowel tissue, causing an inflammatory reaction. That leads to a truncating of the villi lining the small intestine (called villous atrophy). This interferes with the absorption of nutrients, because the intestinal villi are responsible for absorption. The only known effective treatment is a lifelong gluten-free diet. While the disease is caused by a reaction to wheat proteins, it is not the same as wheat allergy. This condition has several other names, including: cœliac disease (with œ ligature), c(o)eliac sprue, non-tropical sprue, endemic sprue, gluten enteropathy or gluten-sensitive enteropathy, and gluten intolerance. The term coeliac derives from the Greek κοιλιακός (koiliakόs, "abdominal"), and was introduced in the 19th century in a translation of what is generally regarded as an ancient Greek description of the disease by Aretaeus of Cappadocia. Classic symptoms of coeliac disease include abdominal distension, vomiting, diarrhoea, weight loss (or stunted growth in children), and fatigue, but while coeliac disease is primarily a bowel disease, bowel symptoms may also be limited or even absent. Some patients are diagnosed with symptoms related to the decreased absorption of nutrients or with various symptoms which, although statistically linked, have no clear relationship with the malfunctioning bowel. Given this wide range of possible symptoms, the classic triad is no longer a requirement for diagnosis.

Often times, grain is used as a filler or additive. Wheat germ is a common example of a gluten based ingredient being used in supplement processing. This same problem can be seen in a number of prescription and over the counter medications. Below is a list of commonly used terms that may be grain based fillers in vitamin supplement products: Wheat germ food glaze food starch maltodextrin MSG Hydrolyzed vegetable protein Textured plant protein Artificial flavors and colors natural flavors dextrin Supplementation is Critical For Those With Gluten Induced Gut Damage Multiple studies have shown the relationship between vitamin and mineral deficiencies and gluten intolerance and celiac disease. For those of us with gluten sensitivity, we have an inflammatory response as our body rejects grains. People with allergies to mold may also react. Grains are rich in mold and mycotoxins; toxins created by mold which forms during the bulk storage of grains. Another trigger for inflammation from grains may be the pesticides which are still in/on the grain. One of the chemicals, atrazine, works like an estrogen. In amphibians, the males become females. Glyphosate is a severe toxin on the gut, with a number of effects that contribute to the inflammatory cascade. There is more to grainflammation than gluten. 05:16 Gluten is in More Than Just Wheat: The protein called alpha gliadin, found in wheat, barley and rye, was discovered in 1952 and studied on 10 people, where it was found to be the trigger for celiac disease. Since then, we have discovered over a thousand forms of gluten. Corn and rice, in addition to other grains, have their own family of gluten and you may be reacting to them. Grains are not gluten free. Aspirin, Ibuprofen and other non-steroidal anti-inflammatory drugs strip away one of the other gut barriers, the mucosa that lines the G.I. tract. Other drugs affect gut motility. 38:41 Grain-Besity Cycle: Grain can induce hormonal changes. Your body’s response to inflammation is to create more cortisol. With chronic long term inflammation, it can lead to adrenal burnout. Adrenal failure or burnout leads to the inability to adapt or cope with inflammation and it gets out of control. Our adrenals are our natural inflammatory control system. Excessive insulin production is a side effect of this, causing amplified fat storage. We end up marbleizing our muscle tissue, which creates a fatty muscle, which slows our metabolism. Muscle sets the metabolic rate. Excess weight increases pressure on joints, thus further limiting physical activity and increasing pain.
