Soya nugget kheema is a healthy Indian dish with the goodness of soya and the rich flavour of Indian spices. Usually, kheema is made from minced meat but this version is for vegetarians and hence we have used soya nuggets. Soya nuggets kheema is a super delicious and easy recipe which is low in carb and fat content and acts as a great addition to the protein component of a balanced vegetarian meal plan. Soya acts as a substitute for several meat products. Since it’s a good source of omega- 3 fatty acids which improve vision, heart health, prevents cancer, it can benefit in lowering down cholesterol levels in a body. Ingredients : ( Serve:4 ) • 1 cup soya nuggets • 1/2 tsp turmeric powder • 1 tsp red chili powder • 1 tsp salt • 1 tsp coriander powder • 2 tbsp oil • 2 bayleaf • 3-4 cloves • 1 cinnamon stick • 2 tsp garlic, finely chopped • 1/2 cup onion, finely chopped • 1 tsp green chili • 1/4 cup tomato, finely chopped • 2 tsp lemon juice • 1/4 cup coriander leaves Instructions: 1. Heat two cups of water with salt, add soya chunks to the hot water and cook them for a while. 2. Drain the soya chunks in a colander, squeeze out excess of water and grind them in a mixie or a food processor. Keep it aside, this is soya chunks keema. 3. Marinate it with turmeric powder, chilli powder, salt and coriander powder. 4. Heat enough oil in a kadai, add the whole spices (bay leaves, cloves, cinnamon stick) and fry them until they turn brown.Now add finely chopped garlic and onion. Saute the onions till translucent. 5. Add chopped green chili and saute for a minute. 6. Add finely chopped tomatoes. Saute till the oil starts separating from the mixture. 7. Now,add the soya nuggets mixture. Stir and mix the soya nuggets mixture very well with the onion-tomato masala mixture, saute for some more time. 8. Finally stir in a tbsp of lime juice and garnish with coriander leaves. Lemongrass, also called fever grass, is a perennial plant with thin, long leaves that is indigenous to many Asian countries. As the name implies, lemongrass smells like lemon, but it tastes milder and sweeter. This herb is used in various Asian cuisines as a flavoring agent due to its potent flavor. Nutritionally, lemongrass is a good source of vitamins A and C, folate, folic acid, magnesium, zinc, copper, iron, potassium, phosphorus, calcium and manganese. It has many beneficial medicinal properties including analgesic, anti-inflammatory, antidepressant, antipyretic, antiseptic, antibacterial, antifungal, astringent, carminative, diuretic, febrifuge, galactogogue, insecticidal, sedative, and anti-cancer properties. The leaves, stems and bulb of lemongrass are used in various treatments. Benefits 1. Helps Digestion Lemongrass promotes healthy digestion. It has antiseptic compounds that effectively kill bad bacteria and parasites in the digestive tract and repopulate the good bacteria in the colon. Or maybe you’ve pushed yourself to include certain tasteless, joyless foods in your diet because you’ve heard they’ll help you lose weight or manage an unwanted symptom. Your parents surely had your best interests at heart when they encouraged you to eat these foods, but they were likely missing one key factor: the role of pleasure in the digestive process. As it turns out, we can be eating the most nutritious food in the world, but if we aren’t enjoying it, our body simply won’t be able to metabolize it to the fullest - and we might even be setting ourselves up to make less-healthy choices later on. In this fascinating new video from #IPEtv, Emily Rosen, Director of the Institute for the Psychology of Eating, explains why Vitamin P - Pleasure - is an important part of any diet. Read part of the transcript below: Hi, I’m Emily Rosen, Director of the Institute for the Psychology of Eating. Today we’re going to talk about Pleasure and Metabolism. Vitamin P – Pleasure – is a vital element that makes our meals nutritionally complete and makes life worth living. Like all organisms, we humans are genetically programmed to seek pleasure and avoid pain. This is can especially be seen when we eat: we’re seeking the pleasure of food and avoiding the pain of hunger. The simple scientific equation for the profound biochemical effects of pleasure is this: When you’re turned on by food, you turn on metabolism. In a study at the University of Texas, participants with very high cholesterol levels were placed on a low-fat diet, but, they were allowed to splurge every other day on a milkshake and a ham and cheese sandwich. According to conventional wisdom, they should have experienced a spike in cholesterol, but there was none. The only elevation they showed was that of enjoyment. Despite the high fat content of the splurge foods, their cholesterol-raising effect was somehow mitigated by the chemistry of pleasure. In another study, researchers from Sweden and Thailand joined forces to determine how cultural preferences for food affect the absorption of iron from a meal. A group of women from each country was fed a typical Thai meal – rice, veggies, coconut, fish sauce and hot chili paste. The Thai women enjoyed the Thai food the but Swedish women did not. This proved to be a crucial detail, because, even though all the meals contained the exact same amount of iron, the Swedish women absorbed only half as much as the Thai women. Both groups then received a typical Swedish meal – hamburger, mashed potatoes, and string beans. Not surprisingly, the Thai women absorbed significantly less iron from their Swedish meal. What a fascinating example of Dynamic Eating Psychology in action! Remove pleasure, and the nutritional value of our food plummets. If you’ve been eating foods that are “good for you,” even though you don’t like them, then you might not be creating the nutritional effect you want.

Ingredients ( Serve: 2 ) • 100 grams soya chunks • 1.5 tsp salt • 1.5 tsp red chilli powder • 1 tsp ginger garlic paste • 2 tbsp oil • 15-18 curry leaves • 1/4 cup onion, chopped • 1/4 cup capsicum, cubes • 1 tsp salt • 1 tsp turmeric powder • 2 tsp coriander powder • 2 tsp garam masala • 1/4 cup tomato Method 1. Place the soya chunks in a bowl and fill it up with enough hot water so that the soya chunks are completely immersed. Leave it aside for 20 minutes. 2. After soaking in water, the soya chunks would appear double in volume. Squeeze all the water from the soya chunks. You can cut soya chunk pieces into smaller ones or use as is. 3. Marinate soya chunks with red chili powder, ginger garlic paste and salt for 10-20 minutes. 4. Heat oil in pan/kadai. Add onions, capsicum, curry leaves and sauté it well. 5. Add salt, turmeric powder, coriander powder and garam masala. Fry it well. 6. Add tomato and sauté until it becomes soft. 7. Add marinated soya chunks and cook it for 15 minutes. garnish with coriander leaves and serve hot. Shrimp Curry : Spicy Prawn Curry The flex cook show : Episode 18 In this delicate yellow curry, a fragrant spice mix imparts a sweet and spicy taste. Fresh, large shrimp are ideal for this dish. You could use prawns instead. This is a easy shrimp dish to make. Preparation Time: 10 minutes Cooking Time: 15 minutes Serves: 4 2 Tbsp. unsalted butter 35 large shrimp, peeled, cleaned, deveined, and seasoned with salt and pepper 1 c. coconut milk 1 tsp. ground coriander 1 tsp. ground cumin 1 tsp. brown sugar 1/2 tsp. ground turmeric 1/4 tsp. red chili powder salt to taste Garnish: 1/4 c. diced cherry tomatoes 1/4 c. pineapple chunks (optional) Melt butter in medium sauté pan. Add shrimp and, on a medium flame, cook for 2–3 minutes on each side (or until cooked through). Set aside. In a medium saucepan, add coconut milk, coriander, cumin, brown sugar, turmeric, and red chili powder, and cook for 5 minutes. Add cooked shrimp; cover and let simmer in sauce for 3 minutes. Salt to taste. Place five shrimp on each plate and top liberally with sauce. Garnish with cherry tomatoes and pineapple. Serve with plain basmati rice, couscous, or chapati.
